Try these tasty recipes for grilling fish! They work for gas or charcoal, whatever your preference.

Barbecued Catfish

Make the marinade first inside, then grill later.

  • 4 thick catfish fillets
  • 2 large onions, chopped
  • 2 cups hickory-smoked barbecue sauce (or try exotic)
  • 1⁄2 cup pineapple juice
  • 1⁄2 cup orange juice
  • 1 cup cider vinegar
  • olive oil

Chop onions VERY fine and sauté them in a little olive oil on stove top until they are cooked and translucent. Let cool then put onions(with oil) in a large bowl and combine with all other ingredients to make a marinade (mix well). Pour marinade over fish and refrigerate. Marinate fish at least 3 hours. Grill over medium high heat until fish is done. Serves 2.

Grilled Whole Mullet

Dress and split mullet but do not scale! The scales hold in the heat while cooking. This recipes refers to striped mullet usually caught in nets and not sea mullet (also known as whiting or kingfish) usually caught on hook and line.

  • 4 whole mullet (about 1 lb each), dressed and split
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic salt
  • 1 teaspoon pepper
  • 3 tablespoons butter, melted

Melt the butter on the stove top and add lemon juice, then garlic salt and pepper. Brush on fish. Cook on medium-high heat 18-22 minutes or until done. Serves 2.

Grilled Snapper Bluefish

Snapper bluefish are small bluefish, and the tastiest are those that weigh a pound or less each. Check size limits in the state you are fishing in before you keep a snapper bluefish.

  • 8 snapper bluefish, dressed
  • olive oil
  • salt
  • pepper
  • lemon juice

Rub bluefish all over with oil and sprinkle with lemon juice. Sprinkle with salt and pepper. Grill over medium high heat about 7 minutes for each side. Great with wild rice. Serves 4.
